El Museo de Jamon is a small chain - kitschtastic; mostly for tourists! That Pata Negra ham you tried; the pigs are black, and free range - they graze on Iberian oak acorns under the trees - that´s all they eat. Quite a wonderful life for a piggy. You are the chemist,and have actually eaten it so can maybe confirm - this ham is supposed to actually melt in your mouth!! Did you notice any melting going on?
