In 2005, after jumping from the good ship Agriquality, I had a period where I got very excited about making my own wines. It was fun to do, chemistry with a purpose.
Now, some time later, come the rewards.
Believe it or not, the above wine is Crabapple and Elderberry.
And it tastes as good as it looks.

Well, that looks pretty damn good to me, so they must taste great!

Have you ever tried elderflower fritters? Clouds from heaven dancing on your tongue!

I have an elderberry tree in the driveway. Never done anything with the flowers though, just the berries.
ReplyDeleteMy Pepere used to make elderberry cordial. Even as a child, I loved the taste (and that's all I was ever allowed). He made dandelion wine, too, but it wasn't nearly as good. My Memere would make jam from elderberries...haven't had that in years, either.

ReplyDeleteLee - I have a crab apple tree out there absolutely covered in apples. Every year I just let them drop off. Every year I think I must do something with them.

Avus: It was a tradition home wine making process - mashing, sterilizing, fermenting, racking, bottling. 1lb 4oz of elderberries, 3lb crabapples and commercial apple juice to make to 1 gallon. Added tannin & tartaric acid. Lots of fun removing pectin haze. Originally made March 2005.
